CHICKEN AND RICE

This one is called "Chicken & Rice" and we love it. Simple food for simple folks. I have this casserole dish that feeds about six people. I dump rice into it, (spraying it with PAM first, or my grandson won't speak to me when he starts cleanup time in the kitchen. The amount of rice is what nicely covers the bottom of the dish, maybe a cup or cup and a half. Add fat-free chicken broth and cream of chicken soup. Place chicken breasts on top and be sure the broth/soup covers them a bit. Add foil, (oh, and garlic salt and pepper, sometimes Mrs. Dash, yellow lid stuff) & bake at 350 degrees. Take off foil and brown a bit. I'm not real fond of pale chicken. Now, THAT'S a recipe.

Takes about five minutes to put together and when the timer rings I yell from my office that somebody needs to look at the chicken stuff. That somebody usually makes a salad, does something with a veggie and we eat. A perfect busy day menu.
