RICE AND CHICKEN DISH # 2

(This version serves 3 people)

1 package Lipton Rice & Sauce, chicken flavor

1 handful of diced, cooked chicken (probably 1 to 1 ½ cups)

1 handful of fresh broccoli, in small pieces

Cook rice according to directions, except I left out the margarine/butter. I cooked it in the microwave, but if you double the recipe, I'm not sure how well that will work.

About two minutes before rice is done (when there is still a little water in it), add chicken. I used leftover roasted chicken from the deli, but the chunky canned stuff would probably work ok for a quick fill-in. Cook about a minute, then add the broccoli. Cut about another minute until broccoli is tender crisp and rice is done.

I'm convinced that the Lipton Rice & Sauce mix is the reason my dh liked it...actually said it was a "keeper". Which he never said when I used Rice a Roni. <g>
