TUNA AND SPINACH PASTA |

This is an adaptation of an Italian recipe I
found years ago, but it makes for a quick and healthy meal.
1 lb spinach, washed and chopped fine 1 onion chopped fine 1 clove garlic, crushed Four tablespoons olive oil 1 can tuna Pasta Parmesan cheese
Fry garlic and onion in about four tablespoons of olive oil until softened. Add spinach and cook until wilted (about five minutes). Add 1 can drained tuna. Cook gently until tuna is warm. Season with salt and pepper. Meanwhile, cook dried pasta to just tender. Drain pasta, toss together with spinach and tuna mix. Drizzle with olive oil and parmesan cheese. Serves 2 - 4 depending on how much pasta you use. |
